Preheat oven to 350º
(Does NOT include what is needed for Cheese Roux)
3lb Russet Potatoes
1/2 Cup of Shredded Cheese
Fresh Ground Black Pepper
Paprika (for the topping color)
Start by liberally buttering your cast iron skillet and placing freshly sliced potatoes in one layer on the bottom of the skillet.
Pour some of your roux cheese sauce over the sliced potatoes and repeat until you have filled the skillet.
Add the 1/2 Cup of shredded cheese on the top, followed by a sprinkling of Paprika.
Cook in the over for 1 Hour.
